This contribution addresses the study of a small wine production and storage complex within the late Roman Byzantine farm of Siret el Giamel in the southern area of the Cyrene region. The structure takes up the whole of the west side of the house and is made up of three communicating rooms on the same axis: to the south is the press with its basin for crushing; in the centre and to the north there are two wine cellars with large terracotta doli, partially-buried with supporting brickwork surrounds up to their necks. The doli are set out around the walls in the two rooms. The overall layout and the internal workings of the structure mirror, once again, the guidelines and practices suggested by Roman agronomists which were widespread throughout the Mediterranean. The architectural and functional study of the building is completed with a number of concluding observations on the role and importance of viticulture and wine production to the economics of the Siret el Giamel farm and the entire area of Cyrene.
